"Linkification" converts links written without an <a> tag to clickable links. I also have a tab preferences one which lets new windows open in tabs properly, rather than the default behaviour which puts popup windows in tabs too and silly stuff like that.

Adblock, allows you to remove any picture or Flash element from a webpage. Great for getting rid of the stupid Jamster adverts that disgrace 90% of websites.
Dictionary Search lets you look up the definition of any word you highlight.
FireFTP, a built-in FTP client
Tabbrowser Preferences gives you more options for Tab browsing
Translate gives you an option to translate a website into and from a bunch of languages.
IE View is useful for the rare occasions you find a site that doesn't work properly in Firefox, it'll open the exact page in Internet Explorer.
Hotmail Tabs makes it so when you check your email from MSN Messenger it'll open in Firefox instead of IE.
Foxy Tunes gives you a small interface giving you control over your preferred Media player from Firefox.
Colourzilla is useful for me, it gives you a colour-picker to get the RGB of any colour on the page.
That's a small handful of the extensions I have.

Stumble Upon, a brilliant extension taking you to a random (but interesting) website on the internet. Super useful for when I'm bored.
ChatzillaIRC client built into firefox.
Blockfall Tetris clone built into firefox .
ForecastFox Tells you the weather for your city\area. Eg. Now in melbourne: Mostly cloudy, 11 C, . Winds: N, 23km\h.
ColourZilla, like the Asparagus said, allows you to see what a certain colour is on the page. It also has a zoom function, to zoom into webpages\images.
Translate Very useful to translate the current page through babelfish.
Download Embedded Allows you to download files embedded into a webpage without the fuss of looking at the webpages' source. You can get files such as .asx and .swf.
BietZilla Make last minute bids on ebay automatically.

Foxytunes was bad, I found this extension really annoying because it still made you open the music program. I had to have winamp open to use the Foxytunes controls, which was pointless seeing as though winamp can minimize and has global hotkeys.
Tabbrowser Preferences was dodgey, for some reason this extension removed the function for me to middle mouse new tabs. Which is probabley the most used function on firefox for me. I had to go to about:config to fix it. Maybe you will have better luck.

I didn't like foxytunes either, because windows media player can minimize to the taskbar anyway, I didn't see the point.

ColorZilla
Web Developer - very useful for looking at the inner workings of webpages!
SmoothWheel - just to scroll nicely ;p
ReloadEvery - lets you reload a page every X seconds
Hotmail Tabs
<a>Add Bookmark Here - adds an 'Add Bookmark Here' option inside every bookmark folder which saves messing around finding folders normally
AdBlock - incidentally, I use this very rarely, because I'm not really that bothered by ads
Linkification
TinyUrl Creator - lets you create tinyurls in seconds
BugMeNot - an excellent extension, saves loads of time with websites that need you to sign up for accounts. (www.bugmenot.com)
Disable Targets for Downloads - stops blank windows appearing when you download stuff.
Mouse Gestures - just installed, getting used to it!

and of course...
Delicious Delicacies - which only means anything to people who used beta versions.
It improves your Firefox experience by 100x whenever you access the options.

Web Developer is a fantastic extension for anyone doing any web work at all. It adds a toolbar which can do loads of handy things ranging from outlining table cells/divs, viewing response headers, W3C validation and resizing the window to 640x480, 800x600 to check other screen sizes, plus loads loads more.

Web Developer- Yeah.
StumbleApon- Yeah.
Delicious Delicacies- Best extension evar.
Popup ALT Attribute- Shows ALT text on mouseover.
SessionSaver 2- Stores all your tabs and reopens them in the next session.
Translate- Babel Fishifies things.
Wayback- Allows you to check Wayback for the current page faster.
Tweak Network- Lets you play with network settings without messing around with about:config.
Extended Statusbar- Does the Opera thing with the status bar. Tells you speed, percentage, time, and loaded size instead of just a blue bar.
undoclosetab- This one's GREAT, cause I'm forever hitting 'Close Other Tabs' by mistake. Let's you re-open multiple tabs after closing them.
