Modplug Tracker.
Although it depends on what format you want to use. Modplug is for MODs, I'm not entirely sure about MIDI (Modplug can convert to MIDI, but the results are nowhere near as good as you would get from a true MIDI program).

You can easily put MODs into MMF with the DMC2 object or the ModFusion X extensions.

Nuklear: They are poorly looked after teeth in desperate need of some dentures Its all part of my hyping of MSD2.
You could try searching for either Mozart or Anvil Studio at Google if you want to make music. Anvil Studio is a bit harder to use though, but I use it.

www.noteworthycomposer.com - for making midis.
It's pointless to make a midi into a wav. Wav's into midis? There is a program called Audio Ear or something but you have to pay.

you can get a microphone and go to sound recorder on your comp and then stick your microphone next to your speakers and hit record while playing your midi, then just edit out the crap
