For me it is Bomberman Tournament for the GBA, I just cannot complete the final boss the dungeon before hand takes a good 10 mins to get through, and takes most of my lives.
I also gave up on Zelda Wind Waker when some dude told me you have to fight all the bosses again at the end, Im not sure how true that is though
Uh, fighting the bosses at the end of wind wake takes maybe 20 minutes tops? Was sure alot more fun then fishing for triangles for hours. THATS the part that took too long. Go finish it
Lol, Wind Waker had piss easy bosses. I wish there was a hard mode or something. Talking of hard mode, I'm currently trying to beat Metroid Prime 2 on hard mode. I've gotten to the Fortress place, but that Quadraxis thing keeps killing me =(

Eternal Daughter becomes freaking difficult at one point.
Commercial games: I never got to finish Out Of This World. It's just too difficult. Same for Heart of Darkness.
Lol, most games. I think a better question is 'Any games you find possible to complete?' Let's see.. X-Com 1,2,4, Need for Speed Most Wanted, most sports games on full difficulty, and most of the Tycoon-style games. Around the end, most games just pile on the things you have to do and give you like a 2% chance to win, so you'd probably have to load & play about 50 times to win.

Super Mario Bros. Haven't tried to beat 8-4 again for about 15 years, though. I used to try and snap the NES controller in half when I got frustrated, haha.

just to name a few.
The only games I don't usually complete are the ones where I actually get too bored of it to continue playing, such as Starfox on the GC.
Normally for me, when I get stuck on a game, I leave it for a week or so, go back to it and find it a lot easier (usually when I do this I get passed the part after a few tries at most)
