I saw this: http://www.youtube.com/watch?v=ySQYrZL8wWQ and got inspired to make something like it. Now's the question: how?

Ah, that's one of fifth's games! That title is very interesting...
I don't have any help with your problem though.
It looks as though the body is just made of multiple objects and the direction of the body parts is determined by detectors on various parts. Why don't you ask Fifth?

Hm... What do you mean by 360-degree movement, exactly? I normally hear that term referring to Sonic-like engines (where you move and act according to the slopes you're on, and where motion can change smoothly from one direction to another along slopes and loops and the like), but I'm not really doing anything of the sort.
In my game, I've got two separate "player" objects for the main character - one for the forelegs and one for the hindlegs - and the animal itself is composed of five separate pieces, which adjust their positions to express angle and direction changes based on the relative distance of the two player objects. It's really kind of a cheat for what it accomplishes.
But what do you want to know about, exactly?

I believe that he is talking about that nice slope detection you got there, and how the animals continue to go the same speed, regardless of the angle of slope.
