For me "Epic" is all about a sense of scale. X-Com has got to be by far the most epic game I've played - you're in control of *everything* from the precise actions of every one of your troops and vehicles, to the building of bases, the research of new technologies and equipment, and ultimately right up to inter-dimensional travel and the conquoring of an alien planet. Best game ever made, by far.
First game to make me go OMG this is giant! was Ocarina of Time. Overwhelmed by how much you had to do in that.
